Here at Short Street we strive to level the playing field as much as possible for our entrepreneurs by giving them options to use their skills and adapt when necessary in the ever-fluctuating culinary industry. While a certain amount of protection is provided to them as an incubator member, we want them to be prepared, flexible, realistic, and open-minded about what it takes to be successful.
Our offerings allow for the continued sustainability of Project Short Street, additional revenue opportunities for our Members and provide the Community with the endless possibilities when it comes to fantastic food.

GASTRO LAB SUPPER CLUB
Our purpose is to foster intentional living by slowing down and embracing conviviality with those around us. Through our Supper Club Series, we create thoughtful, once in a lifetime dining experiences.
The suppers are distinct and meticulously styled to transform the surroundings into breathtaking dinner settings. For a few hours, guests enjoy a slow-paced dinner featuring a menu born from the imagination and creativity of a showcased Gastro Lab chef and inspired by the season, while sipping impeccably paired beverages. As the evening unfolds, guests cherish memorable flavors, unforgettable entertainment and conversation with newfound friends.
SHORT STREET MARKET
At the Short Street Market, our monthly pop-up artisan culinary experience, our members will be able to showcase their skills to the local community.
The market will be geared seasonally and specifically towards prepared, prepared-not-cooked, and frozen family style dishes, fresh sandwiches, soups, salads, and baked goods to go.
We will invite our NC Farm Members to participate, offering produce and products such as meats and cheeses. We will host outdoor cooking demonstrations and invite food truck vendors to be onsite as well.
FOOD TRUCK RALLY
Food Truck chefs are the most versatile people in the food industry. Some of the most talented chefs in the state (many with classical training and fine dining experience) are hiding inside North Carolina Food Trucks! They have adapted to and perfected the art of mobile food as they continue to take catering to the next level.
We are here to connect our community to our food trucks!
The Gastro Lab Test Kitchen serves as a springboard for our chefs to showcase and test their concepts with the community. The team at Short Street works tirelessly to secure opportunities for our members.
PRODUCT PRE-LAUNCH EVENTS
The Short Street Gastro Lab can provide launch parties that are worthy of the best creations coming out of our facility. Our product launch event is an opportunity to showcase the newest products to investors, customers and influencers. Successful brand launches create serious hype around new products to boost initial sales and build a brand's reputation.
Festivals have always been a means of uniting communities through celebrations of harvests and giving thanks for a plentiful growing season. Short Street Gastro Lab is working to reserve our spot at some of the top festivals in the Southeast, and we will be taking Gastro Lab Members along for the ride.
Gathering on the years of festival vending experience of our directors and our thoughtfully planned branding umbrella, the Gastro Lab festival crew will work with Members to provide them with festival and mobile food vending experience and allowing them to further perfect their operational skills and workflow in a faster paced environment than the average restaurant kitchen.
With food tourism being the hottest new trend, this insight and revenue stream option will be invaluable to them as they map out their futures in the culinary industry.
